I'd like to bind different fonts to variables so that the font changes accordingly to the different backend. Is that possible?

I would say that wouldn’t be possible since the fonts are coming ready from Figma. You can manipulate the Figma file using a backed and connecting with the API. In that case, you would need to refresh your app on bravo to display that modification. So, not really possible, maybe in the future? What would be your use case for it?
If you whant to change just betwen a couple fonts you can use someone text layers ( one for each font) with contitional visibility
I have different items list with different styles and I'd like to present them with a personalized font on their cover
