How can I have the firebase login & also collect user specific data (info for their profile page) to POST to my airtable on the same page?
I've tried to do this and the only thing that is successful is collecting the email & password to Firebase, none of the user data shows up in my airtable after the user creates their account.

Have you try to use variable like ${user.access_token} ?
In this case no need to store all informations. Only information not stored in Firebase. Access token is permit to do relationship with firebase and database.
If you need to share all information try to look with a 3rd party tool like zapper or integromat
