I'm in a process of doing my first App. its an e-commerce app and would like to ask if there is an option to connect an external API for the payments as stripe is not supported in my country. if there is an option please let me know

would you be selling multiple products or one product with a single price?

If you find another payment solution that works in your country and supports REST API, it might be possible, but usually there's some kind of payment intent key involved for each transaction that needs to be generated on the backend, which could make this more complex.
