I have a menu bar with a profile icon on it, I tried binding an API Call for the user profile picture, however the entire bar disappears. Is there a way to do this?

It may be caused because you are using a List call and you are not getimg anny return on the call

are you sure that the GET request returns a value!?
sorry that is not supported at the moment. I'd just put a normal icon, and bind the profile image inside the page that is linked to that menu option
