Is there a tag or a way to create a onboarding screen (f.ex 3 screens with some info) and have show only one time, the first time you open the app?

I would advice you go to bravo tags documentation and read about Intro pages, works perfectly.
You can duplicate the figma file to your right to see how they're set up (can't screenshot from my phone but the tags are easy to read and understand)
